This stuff has forever been my favorite
I haven’t made it in quite some time because, let’s face it, it is not even remotely healthy
But I don’t think you have to eat healthy all the time
My general rule of thumb is eating 80-90% healthy and 10-20% not as healthy
During the holiday season, I tend to lean closer toward the 80% and in the other months of the year, it’s more like 90%. Go figure.
However, in the spirit of the giving season, I felt the need to share this amazing recipe with you if you don’t already have it.
It’s so simple it’s scary {because then you basically have nothing stopping you from making it}
Lay down some graham crackers, pour melted butter & sugar on top, bake, top with chocolate chips, bake again. Done.
Of course I made things complicated for myself.
I didn’t feel like buying graham crackers from the store because I have been wanting to make my own for quite some time.
And I hate that store bought graham crackers are not whole wheat. It. drives. me. crazy.
So make graham crackers I did. Instead of making them in a large pan, baking, then cutting them I just made them in the same pan. Less work.
For normal people, I give you permission to just buy regular graham crackers.
For the overachieving anti-refined grain freaks ambitious, the recipe to make the whole thing from scratch is under the normal recipe.
In my personal opinion, both are addicting {hence the “crack” label}.
Neither are healthy {obviously}.
The from scratch ones are slightly improved by using whole wheat flour but that’s it. They are not healthy
If I have to pick a favorite, I can’t. They are both equally amazing, and I’m sure either will make everyone happy. Enjoy!
Christmas Toffee AKA Christmas Crack

Ingredients (24 cookies)
- 12 graham cracker sheets {like the large rectangles that come in a box}
- 6 TBSP butter
- 1/2 cup brown sugar
- 1 1/4 cup semi-sweet chocolate chips
- Optional toppings: 1 TBSP Christmas sprinkles, 1/2 cup chopped nuts or 1/2 cup chopped peppermints or candy canes
Instructions
Preheat oven to 375°F. Line a 9 x 13 baking dish with foil. Arrange the graham crackers in the baking dish in one layer. Try to make all the crackers fit – you’ll probably have to break some of the crackers. Set aside.
In a medium saucepan over medium low, bring the butter and sugar to a simmer. Stir often. Simmer for 5 minutes.
Carefully pour the butter-sugar mixture over the graham crackers. Bake in the preheated oven for 5 minutes.
Take out of the oven and evenly sprinkle the chocolate chips over the graham crackers. Return to the oven and bake 5 minutes.
Take out of the oven and carefully spread the melted chocolate so it covers the graham crackers. Using an offset spatula is really helpful for this.
If you are using any optional toppings, sprinkle those on now.
Let the toffee cool, and cut into 24 squares. Keep covered in the refrigerator. Enjoy!

Homemade Christmas Crack

Ingredients (24 cookies)
For the graham crackers:
- 1 cup white whole wheat flour
- 1/4 tsp cinnamon
- 1/4 tsp baking soda
- 1/4 tsp baking powder
- 4 TBSP melted butter
- 1/4 cup honey
For the toffee:
- 6 TBSP butter
- 1/2 cup brown sugar
- 1 1/4 cup chocolate chips
- for topping: sprinkles, chopped peppermints or nuts {optional}
Instructions
Preheat oven to 375°F. Line a 9 x 13 inch baking dish with foil. Set aside.
Whisk together flour, cinnamon, baking soda, and baking powder. Set aside.
Stir together melted butter and honey; stir it into the flour mixture. Stir well.
Pat the dough into the lined baking dish in a thin layer, making sure to completely cover the bottom of the baking dish. {It might look thin but it will be good once it bakes.}
Bake in preheated oven for 12-14 minutes until it’s lightly browned. Remove from the oven and set aside to cool.
